💡 Pro Tip — Tame the Mesquite, Master the Bark:
Mesquite is the most intense hardwood smoke available — which means it’s also the easiest to overdo. For brisket or pork shoulder, run your first 3 hours at 225°F with the mesquite blend, then switch to a milder wood (like oak or cherry) for the remainder of the cook. This gives you deep smoke penetration and a thick bark without the bitterness that comes from 12+ hours of straight mesquite. For chicken and shorter cooks under 2 hours, mesquite alone is perfect at 275°F.
