By strategically perforating the plate, heat is evenly distributed from side to side and circulated to the top, resulting in 360 degrees of intense heat for precise cooking at temperatures up to 900 degrees. The Yoder Wood-Fired Oven (YS480 / YS640) - A93331 features a half inch cooking stone made in America. Through precision engineering and proprietary stone blend, this commercial-grade stone is kiln-fired to guarantee consistent temperature, efficient heat transfer, and superior heat retention and recovery time.
The sturdy hood completes the design and is specifically shaped to optimize airflow. This feature allows for an intense heat of 800 degrees, perfect for producing a broiler-like effect, and can also be lowered to a baking temperature of 350 degrees. In addition, the flat top of the hood can be utilized as a high-powered cooking surface, using either cast iron or carbon steel cookware. For added durability, the hood is coated with a 1200 degree powder.
